Brewing...
Small-batch specialty coffee, roasted with care in the heart of Pembrokeshire. From bean to cup, every batch is crafted with precision and passion to deliver an exceptional drinking experience.
Crafting exceptional coffee in Pembrokeshire's historic docklands since 2018.
Sample Coffee Shop was born from a simple obsession: finding the perfect roast. What started as a weekend experiment in a garden shed has grown into one of Pembrokeshire's most respected specialty coffee roasters, supplying homes, offices, and cafes across West Wales and beyond. Every decision we make is guided by a relentless pursuit of quality and a deep respect for the farmers who grow our beans.
Nestled in the historic docklands of Pembrokeshire, we source single-origin beans from ethical farms across Central and South America, East Africa, and Southeast Asia. We visit our partner farms regularly, building long-term relationships that ensure fair prices for growers and consistently outstanding beans for our customers. Every bag of Sample Coffee Shop coffee can be traced back to the specific farm and lot it came from.
Every batch is hand-roasted in our refurbished Victorian warehouse using a vintage Probat drum roaster that we restored ourselves. This traditional approach, combined with modern profiling technology, allows us to bring out the unique character of each origin while maintaining the consistency our customers rely on. We roast in small batches of no more than twelve kilograms at a time, ensuring every bean receives the attention it deserves.
Whether you are a pour-over purist or an espresso aficionado, we have a roast that will make your morning ritual something to genuinely look forward to. We believe great coffee should be accessible, not pretentious, and we are always happy to help you find the right bean for your preferred brewing method.
Our meticulous four-stage process ensures every cup of Sample Coffee Shop coffee delivers the flavour profile the farmer intended.
We work directly with farms and cooperatives across twelve countries, selecting only specialty-grade beans that score 82 or above on the SCA scale. Every lot is cupped and evaluated before we commit to purchasing. We prioritise farms that practise sustainable agriculture and pay fair wages to their workers, ensuring our supply chain benefits everyone involved from soil to cup.
Before any production roast, we run multiple sample roasts to develop a profile that highlights each bean's unique characteristics. Our head roaster uses Cropster profiling software alongside sensory analysis to identify the ideal temperature curve, development time, and drop point for every single origin and blend. This process can take weeks of careful experimentation and refinement.
Our restored 1960s Probat UG22 drum roaster is the heart of the operation. We roast in small batches of twelve kilograms or less, monitoring bean temperature and rate of rise in real time. Each roast is logged meticulously so we can replicate results batch after batch. The warehouse fills with the unmistakable aroma of freshly roasted coffee, a scent that has become synonymous with our corner of Pembrokeshire.
Freshly roasted beans are rested for a minimum of forty-eight hours to allow degassing before being sealed in compostable valve bags that lock in freshness. Every bag is stamped with the roast date, origin details, and tasting notes so you know exactly what you are drinking. We dispatch orders within twenty-four hours to ensure your coffee arrives at peak flavour, never more than days from the roaster.

The people behind the beans. A small but dedicated crew united by a love of great coffee.
James founded Sample Coffee Shop after a decade in the specialty coffee industry. A certified Q Grader with an encyclopaedic knowledge of green coffee, he personally profiles and roasts every batch that leaves the warehouse. When he is not hunched over the Probat, he is usually cupping samples from new origins or tinkering with brew recipes in the cafe.
Sophie runs the cafe with warmth and precision. A former regional barista champion, she oversees everything from espresso dialling to customer experience. Her latte art is consistently exceptional, and she has a gift for matching customers with their perfect coffee based on a short conversation about what they enjoy. She also leads our monthly cupping sessions open to the public.
Tom handles the logistics of getting exceptional green coffee from farms in twelve countries to our warehouse in Pembrokeshire. He manages supplier relationships, oversees quality control on incoming shipments, and ensures our online orders are dispatched promptly. A former chef turned coffee professional, he brings a meticulous attention to detail and a palate trained on flavour to everything he does.

"Absolutely incredible coffee. The Dockyard Blend is my daily go-to now and I genuinely cannot imagine going back to supermarket beans. I have tried roasters all over Wales and Sample Coffee Shop is the best by a considerable margin. The freshness and flavour are in a completely different league."
"Tried the Ethiopian Yirgacheffe on a friend's recommendation and I am completely converted. The blueberry and jasmine notes are spot on and you can tell these guys genuinely care about quality at every stage of the process. My morning V60 ritual has never been better. Outstanding roastery."
"Ordered online and it arrived next day in beautiful compostable packaging. The Fortress Dark is like rocket fuel but remarkably smooth at the same time. My husband now refuses to drink anything else and we have a standing monthly subscription. The cafe is worth a visit too if you are ever in Pembrokeshire."
"I run a small cafe in Pembrokeshire and we switched to Sample Coffee Shop last year. Our customers constantly compliment the coffee now, and several have asked for the name of our supplier so they can order for home. The wholesale service is excellent and James is always on hand to help with dialling in. Brilliant local business."
"Popped into the cafe on a whim during a holiday in Pembrokeshire and left with three bags of coffee and a V60 kit. Sophie behind the counter was incredibly knowledgeable and helped me choose beans that suit my brewing style. The pour-over she made me was genuinely one of the best cups of coffee I have ever had."
